Strip away modern excesses and youll find simple values that gratify, like the Victoria Sandwich Cake.
ON the dessert menu the traditional English cakes and puddings seemed a lot more appealing than ornamental swirls of double-cream gateaux and elaborately embellished light-as-air mousse.
While travelling in Britain in August, I found myself ordering a Lemon Drizzle Cake to go with coffee on one occasion, and on another, a Sticky Toffee Pudding to conclude dinner. I also tried Bakewell Tart as a mid-morning guilty pleasure it was perfect.
However, when I had a slice of a Victoria Sandwich Cake that a friend had brought over, I realised I was done. So done with trembling tiramisu and volcano-inducing molten chocolate cream cake.
The quintessential English cake, named after Queen Victoria, is basically two sponge cakes sandwiching jam and cream in the middle. A light dusting of icing sugar at the top adds a dash of sweetness before your tongue arrives, through the thick slices of sponge, at the delicious burst of fruit jam and whipped double cream.
